Rick and Aurora Grimm are often found tending olive trees throughout the year.  Sometimes they are checking irrigation or spreading compost, other times they are climbing up into the middle of the trees to prune the hard to reach sections of the canopy.  In the Spring, they team up to prune about 20+ trees a day until all 500 are prepared for the new growth. Working in the orchard and the vineyard are where they find a peace unlike anywhere else in their life.

The graceful and meticulous Biodynamic cultivation of each tree had lead to a quality of oil that is full of life.  Tuscan varieties make up the proprietary blend; Frantoio, Moraiolo, Leccino and Pendolino as the pollinator.  Each of these varieties bring a different dynamic to the flavor, mouthfeel and aromatics of the oil.  This vintage of Grimm’s Bluff Estate Olive Oil is proving to be very special.  The polyphenol content is very high, and the free acidity of .06% is as low as the third-generation organic mill had ever seen!  This quality is due to the harmony of an excellent growing season, Biodynamic practices cultivating the overall vitality, natural protections from fruit flies, and highly skilled milling.

The oil’s aromas are distinct with raw artichoke, lemon pith and spring grass.  The mouth feel is nothing short of heavenly with an opulent silky texture.  Flavors of green almond, oregano, and the familiar peppery finish is an incredible compliment to almost any dish. One of our favorite pairings is to simply dress your favorite greens, a squeeze of lemon and a dash of salt.
